IFF, a global leader in flavours, fragrances, and bioscience, has announced the official opening of its Vanilla Innovation Centre in Toamasina, Madagascar. The facility marks a structural shift in the organisation’s approach to natural ingredients, transitioning from traditional remote sourcing to a model of "innovation at origin."


By embedding R&D and application capabilities within Madagascar’s principal seaport—adjacent to the world’s primary vanilla growing regions—IFF aims to better manage the natural variability of the crop while accelerating the development of market-ready solutions for global B2B partners.


Vanilla remains one of the most technically complex ingredients in the food and beverage industry, highly susceptible to fluctuations in climate, curing methods, and soil conditions. Adam Jańczuk, SVP of Research, Creation and Design at IFF, stated that the centre allows the firm to connect science and creativity more closely to the crop itself.


The proximity to growing areas provides IFF with three distinct commercial advantages:


  • Shortened Development Cycles: Real-time in-field testing and extraction reduce the time required to translate crop data into viable flavour profiles.


  • Enhanced Traceability: Direct collaboration with farmer networks facilitates a more ethical and transparent supply chain, meeting the ESG requirements of modern food manufacturers.


  • Climate Resilience: On-the-ground insights allow the organisation to respond rapidly to environmental changes that impact the quality and availability of the raw material.



Technical Infrastructure and The Bloomery

The 650-square-metre site is engineered to follow the ingredient’s entire journey from extraction to application. The centre is divided into four primary functional units:


1. Lab Analysis and Molecular Profiling: Utilising contaminant and disease-detection protocols to ensure product integrity. This unit focuses on decoding the chemical signatures of various vanilla types to develop distinctive IFF flavour signatures.


2. Scalable Extraction Facilities: Featuring rigs designed to explore diverse vanilla varieties and optimise post-harvest variables, ensuring that the extraction process is tailored to the specific characteristics of each season’s crop.


3. Flavour Creation and Application Lab: A specialised unit that enables the development of regional profiles. The site includes specific application capabilities for dairy, bakery, and confectionery, allowing IFF to validate performance in real-world market prototypes at origin.


4. The Bloomery Research Greenhouse: A dedicated space for varietal performance exploration. The Bloomery serves as a living laboratory, showcasing diverse vanilla species and supporting research into next-generation post-harvest techniques.




Capability Building via RE MASTER VANILLA™

Beyond its technical functions, the centre serves as a hub for knowledge transfer. The dedicated RE-MASTER VANILLA™ team will deliver hands-on training, workshops, and laboratory programmes intended to bring together international experts, local teams, and corporate customers.


Marcus Pesch, VP of R&D at IFF, emphasised that the centre is built to "turn insight into action." By centralising science and application development in Madagascar, IFF can deliver solutions that are market-ready and grounded in the practical realities of vanilla production.
