Johnny Carino’s, the Italian casual dining brand established in 1997, has announced the debut of its next-generation prototype restaurant. Scheduled to open March 25, 2026, in Laredo, Texas, the 6,000-square-foot facility serves as a template for the brand’s future strategic direction. The new concept emphasises a modernised Italian dining experience by integrating a "polished everyday" aesthetic with a heavily expanded bar and beverage program.
The Laredo location at 7605 San Dario Ave represents a significant pivot for the brand as it approaches its 30th anniversary, aiming to stay relevant in an increasingly competitive casual dining landscape.
Prototype Design and Operational Features
The updated restaurant design moves away from traditional legacy layouts in favour of an open interior aesthetic. Key architectural and design features of the 6,000-square-foot prototype include:
Open Kitchen Concept: Designed to provide transparency and energy to the dining room.
Anchored Bar Presence: A centrally located, expansive bar area equipped with multiple televisions to foster a social atmosphere.
Versatile Dining Spaces: The inclusion of a private dining area tailored for corporate and family events.
Outdoor Integration: A patio area featuring fire pits, extending the usable floor space and appealing to the demand for alfresco dining.
The interior branding also includes a red Vespa scooter, serving as a distinctive visual anchor to the brand’s Italian heritage within the modernised setting.

Social Dining and Beverage Growth
The prototype introduces an enhanced beverage strategy, which the company identifies as a primary growth lever moving forward. The new program includes craft cocktails, a curated wine list, and 20 draft beers.
To drive off-peak traffic, the brand is introducing a tiered Happy Hour program available Monday through Friday from 3:00 p.m. to 6:00 p.m. and daily from 9:00 p.m. to close. Signature additions to the cocktail menu, such as the Hibiscus Rosato Paloma and Roma Mule, are designed to modernise the menu while retaining long-term staples like the Italian Sangria and Bellini.
Allan Gantes, Chief Executive Officer of Johnny Carino’s, noted that the investment in the Laredo site reflects the brand’s roadmap for future expansion. Gantes emphasised that the goal was to create a more "vibrant environment" while remaining rooted in the traditional Italian flavours that define the brand.
J.D. Gantes Jr., Head of Marketing, described the prototype as a "meaningful evolution," highlighting that while the design and cocktail programs are being elevated, the core menu of handcrafted pizzas and signature pastas will remain the foundation of the operation.

The launch of this prototype signals Johnny Carino’s intent to compete in the "polished casual" segment. By focusing on a more sophisticated bar environment and social atmosphere, the brand is positioning itself to attract a broader demographic of diners who prioritise experience alongside value. The official opening on March 25 will serve as a pilot for future renovations and new builds across the Johnny Carino’s portfolio.
