Personalised nutrition and gut health science company ZOE has entered the packaged food category in the United States with the launch of the ZOE Gut Health Bar.

Formulated by the company's team of nutritional researchers, the line extension marks ZOE’s inaugural entry into commercial snacking. Each bar incorporates more than 10 whole plant ingredients, providing 8 grams of dietary fibre and 7 grams of plant-based protein. The product is commercially available across the US market via ZOE.com, retailing at $50 per 12-bar carton or $45 per month via an automated direct-to-consumer (DTC) subscription model.

The launch targets structural opportunities within the US snack food landscape. Data from the National Health and Nutrition Examination Survey (NHANES) indicates that 95% of American adults consume snacks daily, with roughly two snacking occasions per day contributing 24% of total daily caloric intake. Despite this high consumption frequency, the brand argues that conventional high-protein and functional snack bars remain heavily saturated with ultra-processed ingredients, emulsifiers, synthetic additives, and isolated starches that compromise gut microbial diversity.

"The US is undeniably a nation of snackers, but for too long, the snacking food category has optimised for convenience over nutritional quality and gut health," said Professor Sarah Berry, Chief Science Officer at ZOE and Professor of Nutritional Sciences at King's College London.

"Snacking itself isn't the issue; it's the quality of what people are eating. Through my research, I've found that for people who snack, choosing higher-quality snacks can be one of the simplest dietary strategies for improving health and is linked to more favourable markers of metabolic health."

Formulation and Ingredients

The product formulation is engineered around whole-food matrices and plant diversity rather than reconstituted protein isolates or processed syrups:

🍫 70% Dark Chocolate + Sea Salt: Combines a foundational blend of whole nuts, legumes, and seeds enrobed in a custom 70% cocoa dark chocolate formulated without commercial emulsifiers or soy lecithin, finished with sea salt.

🍓 Raspberry + Goji Berry: Blends real tart raspberry pieces with nutrient-dense goji berries, whole seeds, and grains to deliver a fruit-forward profile backed by natural dietary fibre.

The recipes incorporate more than 10 distinct whole plants per unit, including almonds, cashews, edamame, red lentils, flaxseeds, pumpkin seeds, seaweed, and fermented kombucha.

Rather than pulverising ingredients into a uniform paste, the manufacturing process preserves the physical cellular structure of the nuts, seeds, and legumes. This intact food matrix is designed to slow gastric transit, allowing unhydrolysed nutrients to travel deeper into the distal colon to feed gut microbiota while moderating postprandial glucose absorption.

Furthermore, the physical chew resistance is intended to slow mastication speed. According to data from ZOE's ongoing PREDICT clinical research studies, rapid eaters consume an average of 120 more calories per day compared to slower eaters, with a 20% reduction in eating velocity correlating to an approximate 15% reduction in overall energy intake.

Health and Functional Claims

The commercial introduction aligns with ZOE’s foundational dietary framework, which advises consumers to consume at least 30 distinct plant varieties each week to maximise gut microbiome richness.

The US market debut coincides with a proprietary ZOE survey of 1,000 American adults responsible for grocery shopping, highlighting persistent confusion within the better-for-you snack aisle:

Fibre Awareness Deficit: While 45% of respondents consider themselves healthy eaters, 70% of this demographic do not know the recommended daily dietary fibre intake.

On-Pack Marketing Scepticism: 64% of shoppers reported feeling misled by front-of-pack claims on packaged food products.

Demand for Transparent Guidance: 69% affirmed they would alter everyday grocery choices if given transparent, science-backed guidance regarding food healthfulness.

"The modern food environment is stacked against us, flooded with ultra-processed snacks designed around marketing buzzwords rather than actual gut health nutrition. At ZOE, we are rewriting the rulebook," said Dr. Tim Spector, MD, Scientific Co-Founder of ZOE.

"We have designed the Gut Health Bar to prove that snacking doesn't have to compromise between health or flavour—we're delivering real, whole plant nutrition designed to support your gut health, while keeping your taste buds satisfied on the go."

Availability

ZOE is adopting a digital-first commercialisation model for its US retail entry:

Channel Execution: Initial distribution is hosted exclusively on ZOE.com, leveraging the company's direct subscriber ecosystem and digital community of health-tracking members.

Price Architecture: Merchandised in 12-count display cartons at an introductory price of $50 for a one-time purchase ($4.17 per bar), or $45 per carton via recurring monthly subscription ($3.75 per bar).

The direct-to-consumer sales model enables the company to evaluate repeat purchase metrics, customer lifetime value, and cohort reorder frequencies across both flavour lines before exploring physical retail distribution across speciality, natural, and conventional grocery multiples.
