Cellular agriculture and biotechnology company GALY has commenced commercial cocoa operations in the United States, launching chocolate made from cultured cocoa into professional kitchens under its dedicated brand, WunderHaus.

The operational milestone connects the company's proprietary bioreactor cultivation technology with continuous pilot-scale processing and initial commercial purchase orders. Headquartered in Massachusetts, the business is managing early production out of its manufacturing footprint in Essex, focusing on supplying professional pastry chefs, high-end hospitality venues, and boutique chocolatiers with couverture and baking chocolate.

Alongside its domestic commercial rollout, GALY is advancing international expansion into the United Arab Emirates (UAE) ahead of a scheduled market entry in 2027.

Foodservice Route-to-Market in the United States

WunderHaus is utilising a chef-led commercialisation strategy to establish culinary validation and build early sales volume across the hospitality and dining sectors.

The brand secured one of its inaugural commercial purchase orders from Boston dining destination Troquet on South, which will introduce dishes utilising the ingredient during a dedicated commercial launch event in the fourth quarter. Additional hotels, fine-dining restaurants, and culinary operators are currently conducting commercial kitchen trials to integrate the chocolate into winter pastry and savoury menus:

🍫 Culinary Couverture and Baking Formulations: Formulated using GALY's cultured cocoa powder blended with standard chocolate confectionery ingredients to perform across pastry tempering, sauces, glazes, and baking applications.

"It's such a flavourful chocolate. It's floral, and you pick up on cherry and plum notes," noted Chef Aaron Lhamon during menu trials. "Game birds can hold up to that, and the chocolate can also accent a dried cherry compote. You can mount a jus with the 70% chocolate instead of butter. It gives you a richer mouthfeel without overpowering the flavours that are there, and you don't lose the nuances of the chocolate."

Tank-Grown Cocoa and Upstream Fermentation

GALY's production process represents a technological departure from conventional agricultural cultivation, which relies entirely on tropical tree crops exposed to climatic volatility.

The upstream biological process begins with cellular material sampled from a single cocoa bean:

Bioreactor Biomass Growth: The cell lines are cultivated within controlled, brewery-style liquid fermentation vessels, multiplying biomass in sterile, automated conditions without agricultural pesticides or land-use disruption.

Downstream Processing: Once harvested from the growth tanks, the cellular material undergoes traditional post-harvest processing outside the vessels, including fermentation, drying, and roasting to trigger Maillard reactions and standard flavour precursor development.

Milling and Formulation: The roasted material is milled into fine cocoa powder before being combined with conventional confectionery inputs to manufacture professional couverture.

By controlling cellular reproduction parameters indoors, the process eliminates agricultural vulnerabilities linked to viral crop disease (such as swollen shoot virus), ageing tree stocks, and prolonged drought or excessive rainfall across equatorial cocoa basins.

UAE Market Entry and Global Sourcing Partnerships

The company is pairing its US foodservice debut with structured commercial expansion across the Middle East.

GALY has secured an initial purchase order from an independent chocolate manufacturer in Dubai, supported by commercial engagements with hotel culinary directors and luxury dining establishments across the UAE. The business is currently progressing through regional food safety regulatory clearances and import logistics frameworks ahead of broader UAE commercial availability scheduled for 2027.

To ensure long-term genetic diversity and flavour versatility, GALY is exploring collaborative agreements with traditional agricultural cocoa growers in West Africa and Latin America. The hybrid model is designed to cross-pollinate rare or region-specific genetic strains into tank-based production, complementing traditional agricultural supply chains while providing commercial processors with a predictable secondary sourcing pipeline.

Commercial distribution for WunderHaus chocolate will continue scaling across US independent restaurants and luxury hotels throughout late 2026, ahead of scheduled international channel expansion into the Gulf region next year.
