CAVA, the leading Mediterranean fast-casual restaurant brand, has announced the nationwide launch of Glazed Salmon, marking the company’s first foray into seafood. Set to debut on Monday, April 20, the new protein represents a strategic expansion of the brand’s core menu, aligning with traditional Mediterranean dietary patterns that prioritise seafood as a staple ingredient rather than an occasional luxury.


The introduction of salmon is a significant move for CAVA as it seeks to diversify its protein offerings and meet growing consumer demand for nutrient-dense, high-quality options. The Glazed Salmon is positioned as a protein-packed choice rich in omega-3 fatty acids and essential vitamins, including B12 and D.


Ted Xenohristos, Co-founder and Chief Concept Officer at CAVA, emphasised that the addition of salmon is designed to scale the authentic Mediterranean experience. According to Xenohristos, the brand focused heavily on sourcing and preparation to ensure the product meets the quality standards expected by its customer base while remaining true to the brand’s culinary identity.



Ingredient Sourcing and Preparation Logic

The Glazed Salmon features a specific preparation method intended to highlight regional flavours. The fillets are marinated in a house-made pomegranate glaze and roasted to achieve a caramelised texture.


Key details of the flavour profile and sourcing include:


  • Pomegranate Molasses: A staple of Levantine cooking, providing a tangy-sweet profile.


  • Just Date Partnership: CAVA is sourcing its pomegranate molasses from Just Date, a female-founded company that utilises organic pomegranate juice and organic dates.


  • Flavour Integrity: The glaze is designed to complement CAVA’s existing suite of grains, greens, and dips.



New Chef Curations and Seasonal Integration

Alongside the launch of the individual protein for build-your-own bowls, CAVA is introducing two new seasonal Chef Curations to demonstrate the versatility of the salmon:


  • Salmon and Strawberry Sesame Bowl: Features salmon and tzatziki over brown rice and spinach, topped with a tart strawberry sesame dressing, roasted red pepper hummus, and sumac slaw.


  • Salmon and Yoghurt Dill Bowl: Pairs the glazed salmon with saffron basmati rice, arugula, traditional hummus, Crazy Feta, and a yoghurt dill dressing.




The Glazed Salmon will be available starting April 20 at all CAVA locations nationwide, accessible through in-restaurant dining, online ordering, and the mobile app. To drive digital adoption and customer loyalty, CAVA will host a salmon-themed in-app experience from May 4 to May 11, offering exclusive rewards to users who engage with the new menu item.
