Japanese Barbecue Sauce brand Bachan's has announced its first product portfolio extension outside its foundational sauce platform with the launch of Bachan's Japanese Mayos.
Debuting exclusively across Whole Foods Market stores nationwide on 26 October 2026, the trio of savoury condiments introduces Japanese-style mayonnaise into mainstream US grocery chillers and condiment fixtures. Merchandised in 11.2-fluid-ounce bottles at a suggested retail price (SRP) of $8.99, the line extension marks the company's entry into the broader table sauces and cold condiments sector following four years of recipe formulation.
The launch addresses expanding consumer and culinary interest in Japanese pantry staples, positioning authentic umami-forward condiments for diverse meal occasions spanning handheld sandwiches, burgers, sushi rolls, and grain bowls.
"Mayonnaise has always been a staple in our home. Growing up Japanese-American and travelling throughout Japan, I knew its versatility could go far beyond tuna salad and turkey sandwiches," said Justin Gill, founder and Chief Executive Officer of Bachan's.
"The key is making a mayo so delicious that it inspires you to use it in new ways. We've spent more than four years perfecting our Bachan's Japanese Mayos and learned a lot about mayo during this time period. I really couldn't be more excited to finally launch our Japanese Mayos and to bring the bold flavour and versatility people love about our sauces into a whole new category."
Formulation and Flavour Portfolio
Unlike standard Western mayonnaise recipes that incorporate whole eggs and distilled white vinegar, Bachan's Japanese Mayos are formulated around the traditional Japanese emulsification profile, combining free-range egg yolks with authentic rice vinegar to create a richer, custardy texture with elevated umami:
🟡 Original Japanese Mayo: Formulated with free-range egg yolks and real rice vinegar, delivering a balanced, tangy, and silky umami profile engineered as an all-purpose spread, dip, or sauce base.
🌶️ Spicy Japanese Mayo: Pairs the rich egg-yolk and rice-vinegar foundation with cayenne pepper heat that builds progressively, designed for burgers, coated chips, and sushi applications.
🧄 Black Garlic Japanese Mayo: Blends aged, cured black garlic into the creamy egg yolk emulsion, imparting subtle sweet molasses undertones and deep savoury depth.
By utilising yolk-only emulsification and rice vinegar, the brand circumvents the sharper, acidic finish typical of mass-market domestic mayonnaises, providing home cooks and foodservice operators with an authentic Japanese condiment texture without requiring speciality Asian grocery sourcing.
Whole Foods Market
Bachan's is initiating commercial distribution exclusively through natural food grocer Whole Foods Market before contemplating broader multi-outlet grocery expansion.
Partnering with Whole Foods Market across its national footprint of more than 500 locations provides the manufacturer with high-exposure retail real estate among ingredient-conscious, premium shoppers. The structured exclusivity allows the brand to establish early sales velocity, evaluate SKU performance across the three flavour expressions, and build shopper loyalty ahead of wider commercial retail deployment.
Bachan's Japanese Mayos in Original, Spicy, and Black Garlic are available commercially across Whole Foods Market stores nationwide starting 26 October 2026.
