Bakery brand Milk Bar has partnered with Dairy Farmers of America (DFA) brand Plugrà Premium European Style Butter to launch the Butter Lover's Cookie, a limited-time bakery creation highlighting high-butterfat dairy as a lead flavour profile.
Available from 1 November through 5 December 2026, the seasonal cookie is sold across Milk Bar bakeries nationwide, via local on-demand delivery, and through the company’s direct-to-consumer digital storefront at milkbarstore.com, packaged in a six-count tin for $28. The recipe showcases European-style cultured butter, engineered to deliver a rich, golden profile with Milk Bar's characteristic crisp-edge and soft-centre texture.
The collaboration represents an ingredient-led marketing partnership that pairs an established artisanal foodservice supplier with a high-profile retail bakery concept, using co-branded menu items to elevate premium dairy credentials during the fourth-quarter holiday baking window.
"Butter is one of those ingredients that bakers can take for granted because it's always there, quietly doing the work. But really great butter changes everything," said Christina Tosi, Chef and Founder of Milk Bar. "I've been a Plugrà fan from the very beginning. It was a non-negotiable ingredient in every batch of cookies, cakes and pie we baked on Milk Bar's opening day, and it's been part of our story ever since. Getting to team up with Plugrà all these years later and put butter where it belongs, front and centre, feels pretty special."
Dairy Formulation and European Butterfat Standards
The product formulation centres on the rheological and organoleptic properties of European-style butter compared to standard North American commodity butter:
🧈 82% Butterfat: Unlike standard US commercial butter, which typically contains 80% butterfat, Plugrà is slow-churned to achieve an 82% butterfat standard. The lower moisture content reduces water evaporation during baking, resulting in a flakier, tender crumb structure and concentrated dairy richness.
🍪 The Butter Lover's Cookie: Built around an unapologetically butter-forward sensory matrix, delivering a golden finish with balanced caramelisation and a tender centre.
The collaboration showcases how slight variances in milk fat concentrations directly dictate the physical performance and finished texture of laminated and drop-cookie doughs.
"Partnering with Milk Bar is a dream collaboration for us as Christina and her team bring unmatched passion and delicious quality to everything they do," said Jenny Mehlman, Senior Director of Marketing at Dairy Farmers of America. "Plugrà is not only part of Milk Bar's history but the most preferred brand of butter by professional chefs today because it is slow-churned and perfectly balanced with 82% butterfat — the European standard — to deliver a rich, creamy taste and easy-to-work-with texture."
Ingredient-Led Co-Branding in Bakery Retail
The commercial introduction comes as butter and cultured fats receive renewed consumer interest across culinary media and premium retail fixtures.
Historically treated as an invisible functional substrate in commercial baking, premium butter has increasingly transitioned into a lead marketing feature. Brand partnerships linking ingredient suppliers directly with celebrity-led bakery brands allow primary agricultural processors like Dairy Farmers of America to communicate technical quality differentiators, such as slow-churned processing and elevated butterfat ratios, to mainstream consumers.
For Milk Bar, highlighting a long-term supply chain partner provides ingredient transparency and authentic storytelling, reinforcing the bakery’s premium positioning without adding operational complexity to its production schedule.
