Lifeway Foods has reintroduced its cultured kefir platform to the commercial foodservice sector, partnering with boutique dessert bars and frozen yoghurt destinations across the United States.
Formulated to pour directly into standard commercial soft-serve machines, the offering replaces conventional dehydrated powder mixes with authentic liquid kefir. The product has launched across prominent foodservice accounts, including Drugstore, Mikono, and Culture Club, securing presence in urban dessert hubs across New York, Chicago, and Los Angeles, with ongoing deployment into secondary metropolitan areas.
The commercial move marks the return of Lifeway's soft-serve format following the closure of its proprietary Starfruit Café chain (later rebranded as The Lifeway Kefir Shop) in 2021. Rather than rebuilding a capital-heavy brick-and-mortar hospitality estate, the Nasdaq-listed dairy processor is deploying an asset-light wholesale strategy, supplying hospitality and frozen dessert operators with bulk functional dairy bases.
"I'm excited to see the frozen kefir comeback at a time when people are looking for enjoyable foods made with real ingredients," said Julie Smolyansky, President and Chief Executive Officer of Lifeway Foods. "Lifeway was the first to make frozen kefir, and we've continued to build on that experience from our Chicago shops to pints sold at retailers nationwide."
Smolyansky added: "Many frozen yoghurt mixes start as a powder. Ours starts with real kefir, bringing its signature tart, tangy flavour, high-quality bioavailable protein and 50 billion CFUs to the soft-serve machine. It's a delicious, guilt-free, gut-healthy and lactose intolerance-friendly option for consumers, including those looking for protein-forward foods while using GLP-1 medications."
Cultured Dairy and Functional Nutrition
Unlike standard soft-serve and frozen yoghurt formulations that rely on stabilised dry powders, reconstituting starches, and refined sweetening syrups, Lifeway's soft-serve base maintains the microbiological profile of fluid fermented milk:
🍦 Real Cultured Liquid Kefir: Formulated from authentic fermented milk, delivering 50 billion colony-forming units (CFUs) of live probiotic cultures per serving alongside bioavailable dairy protein in an unadulterated liquid format.
By retaining a live bacterial culture matrix, the soft-serve formulation provides digestive accessibility for lactose-sensitive patrons through bacterial lactose reduction during fermentation.
Furthermore, the nutritional composition targets emerging dietary shifts driven by pharmaceutical weight-management treatments. As consumers prescribed GLP-1 receptor agonists prioritise nutrient-dense, protein-forward snacks that support satiety without inducing gastrointestinal heaviness, functional cultured dairy provides operators with an appealing alternative to sugar-laden frozen treats.
B2B Foodservice Integration
The wholesale soft-serve rollout allows Lifeway to leverage its historical brand equity within modern hospitality channels without assuming physical real estate leases.
Originally pioneering the frozen kefir movement in 2008 through the launch of Starfruit Café in Chicago, the business operated four locations and mobile food trucks for 13 years before retiring the retail format in 2021. While Lifeway retained consumer touchpoints via packaged retail grocery pints and experiential marketing pop-ups, supplying third-party hospitality operators opens a steady high-margin institutional revenue stream.
Partnering with independent, trendsetting frozen yoghurt concepts provides the business with high-visibility urban placement, bridging liquid-to-lips tasting experiences with existing centre-store retail kefir sales in conventional supermarkets.
Lifeway Foods is actively onboarding independent dessert destinations, regional frozen yoghurt groups, and casual dining operators seeking to integrate cultured probiotic dairy onto commercial soft-serve menus nationwide.
