Artisan ice cream brand Jeni's Splendid Ice Creams has launched Appalachian Acorn Pie, a limited-edition autumn flavour developed through a five-year agricultural supply chain initiative.


Commercially available from 1 October across Jeni's scoop shops nationwide and via its direct-to-consumer digital platform, the limited-volume release features ice cream crafted with flour milled from wild-foraged Ohio oak acorns, folded with a graham cracker swirl.

The project highlights an unconventional sourcing and ingredient development process, requiring the company to establish an upstream agricultural collection, tannin-removal, and milling network from scratch to commercialise a historically underutilised North American nut crop.


The development of Appalachian Acorn Pie originated five years ago when Jeni's research and development team began investigating whether native North American acorns could serve as an ice cream ingredient.


While acorns were historically consumed as a dietary staple by indigenous communities across North America, the tree nut currently lacks commercial cultivation, processing standards, and wholesale distribution infrastructure in the United States. Initial product exploration relied on imported acorn flour, but after international procurement proved unviable for long-term commercialisation, Jeni's opted to establish a domestic, regional supply model.


"The problem was, those early international sources for acorn flour gave us a first taste of what this ice cream could be, which was so fragrant and nutty and beautiful," said Beth Stallings, Senior Director of Innovation at Jeni's. "From that moment, we knew we had to find a way to make this flavour, whatever it took. And it took a lot of amazing work."


Partnerships and Processing Infrastructure

To establish a verified regional supply pipeline, Jeni's partnered with Route 9 Action Network, an agricultural cooperative based in Carroll County, Ohio, specialising in commercial chestnut production.


Because raw acorns contain high concentrations of astringent and bitter tannins that make them unpalatable and unsafe for consumption without processing, Jeni's supported Route 9 with grant documentation to finance equipment and operational scaling. The funding supported the cooperative in building capacity to collect, wash, and leach tannins from foraged Ohio oak acorns at volume.


Following tannin removal, the processed acorns were transported to a neighbouring Amish farm in Ohio for stone milling into finished flour. The logistical arrangement required unconventional communication and supply-chain coordination, relying on physical postal correspondence, communal telephone access, and on-site visits to maintain quality control and production timelines.



Flavour Profile and Distribution

The resulting Appalachian-grown and milled acorn flour is incorporated directly into Jeni's dairy base, delivering a nutty and sweet flavour profile featuring notes of hazelnut, coconut, and chestnut, paired with an integrated graham cracker swirl.
