Tillamook County Creamery Association (TCCA), the Oregon-based dairy cooperative, has officially launched a new line of premium ice cream bars, marking a strategic expansion into the portable frozen snack segment. The move is designed to leverage the brand's established reputation for high-fat, creamy dairy products in a format that caters to on-the-go consumer consumption habits. Alongside the new bar line, the cooperative is also increasing its SKU count in the pint category to meet growing retail demand for diverse flavour profiles.
Portable Frozen Snacks
The new product line features four of Tillamook's core flavours encased in a crisp chocolate coating. According to Hunter Clayton, Senior R&D Associate Scientist at TCCA, the development process focused on maintaining the brand's signature texture while adapting it for a handheld format.
The initial product lineup includes:
Cookies & Cream: French vanilla base with cookie inclusions.
Mint Chocolate Chip: Mint-infused dairy with chocolate chips.
Tillamook Mudslide: Chocolate base with fudge swirls and chocolate chips.
Vanilla Bean: Vanilla base utilising real crushed vanilla bean seeds.
This expansion allows TCCA to compete more directly in the convenience and "solo-snacking" categories, a high-growth area within the frozen dessert industry.
Expanding the Pint Portfolio
In addition to the new bar format, Tillamook is strengthening its position in the premium pint market. The cooperative has added two fan-favorite flavors to its pint collection: Chocolate Chip Cookie Dough and Cookies & Cream.
This expansion brings Tillamook’s total pint offerings to ten varieties. By diversifying its pint portfolio, TCCA aims to capture a larger share of the "at-home indulgence" market, where consumers are increasingly seeking premium, smaller-format options over traditional family-sized containers.
Strategic Implications for TCCA
The launch of the ice cream bars and the expansion of the pint line represent a calculated move by the cooperative to drive incremental growth through format innovation. By transitioning its "scoop shop" quality to a portable, single-serve format, Tillamook is addressing a shift in consumer behaviour toward convenience without compromising on the ingredient quality that defines its brand identity.
As a dairy cooperative, this move also serves to maximise the utilisation of its members' milk production by moving higher volumes of premium dairy solids into value-added, high-margin retail products.
