Savor and speciality fats provider AAK have entered into a two-year strategic collaboration agreement to jointly develop and commercialise fat-based solutions for dairy alternative and bakery applications.


The agreement aims to serve global food manufacturers, with an immediate commercial focus on the United States and European markets. The collaboration will combine Savor's carbon-to-fat technology with AAK’s existing formulation capabilities and distribution infrastructure.



Technology and Formulation

The partnership brings together complementary technical capabilities to address growing industrial demand for sustainable raw materials. Savor has developed a proprietary carbon-to-fat conversion platform that produces functional speciality fats directly from carbon, completely decoupled from conventional agriculture.


According to Savor, these carbon-derived fats can require 1,000x less land use and generate up to 98% lower carbon emissions than conventional agricultural fats.


AAK will contribute its formulation expertise and established plant-based oils and fats commercial infrastructure to the joint development. The resulting ingredients can be designed to combine Savor’s carbon-derived saturated fats with AAK's plant-based oils to deliver a wide array of functional solutions.


Kathleen Alexander, co-founder and Chief Executive Officer of Savor, stated that AAK brings the precise formulation expertise and commercial infrastructure required to scale Savor's technology. Alexander noted that the collaboration accelerates Savor's path to large-scale food manufacturers who are seeking supply chain resilience and ingredient innovation.

Kim Olofsson, Global Head of R&D at AAK, added that Savor's technology opens up a new source of saturated fats that are entirely decoupled from traditional agricultural supply chains, offering a strong sustainability profile.



Dairy Alternatives and Bakery Applications

The joint development programme will focus on the dairy alternative and bakery sectors, which are two major categories within the global food industry. Both segments face sustained demand for functional fats that maintain critical sensory performance, including texture and taste, whilst diversifying away from volatile agricultural supply chains.


The carbon-to-fat manufacturing platform requires no fertile land, fertilisers, or fresh water, allowing facilities to be established in any global region. In the long term, integrating these carbon-derived fats with plant-based oils is expected to stabilise ingredient pricing and reduce raw material market volatility.


Chiara Cecchini, SVP of Commercialisation at Savor, stated that food and consumer packaged goods manufacturers are currently facing simultaneous pressure to stabilise supply chains and reduce the environmental footprint of core ingredients.


Ronald van der Knaap, Global Head of Dairy, Early Life Nutrition and Savoury at AAK, concluded that the collaboration addresses a direct market need across the food industry. Van der Knaap noted that beyond supply chain resilience and environmental benefits, the partnership will focus on creating applications that deliver high-quality taste and texture for customers within these key segments.
