The primary objective of the new Baking Lab is to help food manufacturers construct a database of empirical measurements, allowing them to work backwards from the finished product to the raw flour specifications. By combining real-world baking conditions with KPM's extensive laboratory portfolio, the centre demonstrates how physical dough changes can be predicted and managed using advanced scientific instruments.


The laboratory's technical infrastructure integrates several core analytical platforms:


  • Rheological Characterisation: The facility utilises the Mixolab and Alveolab systems to measure protein quality, starch gelatinisation, and dough extensibility under stress, providing deep insight into how a dough will behave during industrial processing.


  • Proving and Fermentation Analysis: The Rheo F4 and SDmatic 2 instruments are deployed to monitor yeast activity, gas retention, and starch damage, helping bakers optimise fermentation times and enzyme adjustments.


  • Compositional and Moisture Verification: Sourcing and consistency are supported by the SpectraStar XT, which utilises near-infrared spectroscopy to deliver rapid, non-destructive measurements of flour moisture, protein, ash, and fat levels.


  • Finished Product Digital Inspection: TheiaVu Vision measurement systems automate the post-bake evaluation, utilising advanced imaging to objectively quantify finished product dimensions, surface colour, bake symmetry, and internal crumb structure.



By linking these automated measurements directly to the physical baking process, the lab provides operators with a comprehensive, data-driven overview of the entire manufacturing cycle. This holistic approach removes the guesswork from product development and quality assurance, ensuring that raw materials are thoroughly characterised before they ever enter the production line.



Pre-Screening Raw Materials for Commercial Millers

For large-scale milling groups and commercial bakeries, adopting an instrument-first testing model yields substantial macroeconomic benefits. Industrial ovens and automated dough-handling lines operate under strict, continuous schedules, where a single batch of inconsistent flour can lead to severe production delays, equipment downtime, and significant waste.

Kazakhstan remains a critical player in the global grain trade, serving as a primary exporter of high-protein wheat to neighbouring Central Asian and European markets. As international trade regulations and grain buyers enforce increasingly strict quality standards, domestic Kazakh exporters must adopt advanced testing methodologies to remain competitive on the global stage.


The joint investment in the French facility underlines a shared corporate commitment to elevating global grain and flour standards.
