US-based flavour house OSF Flavours has introduced a dedicated flavour, masking, and sweetening solution engineered specifically for prebiotic and functional sodas.


The platform is designed to eliminate bitterness, astringency, and persistent sweetener aftertastes commonly encountered when formulating low- and zero-sugar beverages with dietary fibres, botanical extracts, and high-intensity sweeteners.


The solution addresses formulation friction in the functional beverage category, where product developers frequently manage sensory compromises stemming from active ingredients. Soluble dietary fibres such as inulin or acacia can impart earthy bitterness, while steviol glycosides and alternative sweeteners often yield a lingering, cloying finish. Simultaneously, functional adaptogens and botanicals, including guarana and ginseng, can introduce medicinal off-notes that standard top-note flavourings struggle to cover without creating unbalanced flavour delivery.


According to OSF Flavours, beverage formulators historically address sweetening, masking, and flavour selection in isolation. In practice, altering one component often disrupts the balance of the other two, extending development lead times ahead of fixed retail reset schedules.



Three-Component Formulation

To resolve these formulation trade-offs, OSF Flavours structured its system as a single, coherent ingredient package comprising three functional elements:


Targeted Masking System: Neutralises the bitter notes of prebiotic fibres and blunts the earthy or medicinal character of active botanicals to establish a neutral base.


Sweetness Modulator: Calibrated specifically for low- and zero-sugar matrices to follow the temporal sweetness curve of sucrose, eliminating lingering sweetener aftertaste.


Dedicated Flavour Range: Developed specifically to integrate harmoniously with botanical extracts rather than competing against them.


"For product developers, the practical benefit of this solution is speed and predictability," said Pierre Battu, Managing Director for Asia at OSF Flavours.


"A validated flavour, masking and sweetening system removes the longest and least predictable part of the development cycle, which frees bench time for the decisions that differentiate a brand: fibre level, active dosage, acidity and packaging."


Functional Beverage Prototypes

To validate system performance under commercial processing conditions, OSF Flavours developed three reference beverage prototypes. Each concept incorporates 2% acacia fibre alongside a targeted active botanical within a reduced-sugar or sugar-free base:


🥤 Functional Cola: Formulated with guarana, warm spices, and citrus zest.

🍹 Fruity Energy Drink: Blended with acerola, tropical fruit profiles, and candy-inspired sweetness.

🥒 Lime, Mint and Cucumber: Engineered with ginseng to deliver a refreshing botanical profile for wellness-oriented beverages.


In internal evaluations, all three beverage concepts achieved clean sweetness perception and total suppression of fibre bitterness and active ingredient off-notes, while preserving the intended flavour architecture after pasteurisation and shelf storage.



Application Flexibility and Support

OSF Flavours is offering the prototypes as reference formulations for brand owners, beverage contract manufacturers, and product developers.


The company's technical applications team can adapt the three-part system to align with bespoke manufacturer specifications, accommodating alternative soluble fibre sources, proprietary functional active complexes, varied high-intensity sweetener blends, and clean-label dietary requirements.
