Chipotle Mexican Grill has announced that its first restaurant in Mexico will open on Thursday, 16 July 2026, in San Pedro Garza Garcia, Nuevo Leon. The opening, executed in partnership with major Latin American and European restaurant operator Alsea, marks a key milestone in the company's international expansion strategy.
Located within the Monterrey metropolitan area, the new venue introduces Chipotle's customisable menu to Mexican consumers, utilising regional ingredient suppliers and established prep techniques.
Joint Development
The Nuevo Leon restaurant is the inaugural location to open under the development agreement established between Chipotle and Alsea in April 2025. Following this initial market entry, the partners plan to open additional restaurants in Nuevo Leon later this year, with expansion into Mexico City scheduled for 2027.
The Monterrey metropolitan area was selected for the debut due to its economic performance, growing population, and position as a prominent business and innovation hub.
Scott Boatwright, Chief Executive Officer of Chipotle, stated that the brand is entering the market with a commitment to delivering high-quality, freshly prepared food with a focus on convenience and customisation. Boatwright noted that Nuevo Leon represents an ideal starting point for this expansion, backed by Alsea's operational expertise and local market knowledge.
Nate Lawton, Chief Business Development Officer of Chipotle, added that the initial focus is on optimising the operations of this single venue and learning from local guest preferences. Lawton noted that this first location will serve as a proof-of-concept to guide the brand's long-term growth in the country.
Operational Execution and Menu Portfolio
The restaurant will feature Chipotle’s standard menu, prepared daily without the use of artificial colours, flavours, or preservatives.
To cater to diverse consumer preferences, the core product categories are structured as follows:
🌯 Burritos: Soft flour tortillas wrapped around customisable combinations of rice, beans, proteins, and salsa.
🥣 Bowls: A customisable dish featuring a base of rice or greens topped with proteins, vegetables, and dressings.
🥗 Salads: Fresh romaine lettuce blends served with custom toppings and vinaigrette.
🌮 Tacos: Soft flour or crispy corn shells filled with selected meats, cheese, and salsa.
🧀 Quesadillas: Folded tortillas filled with melted cheese and proteins, grilled to order.
Christian Gurria, Chief Executive Officer of Alsea, commented that bringing Chipotle to Mexico is a major step in the group's portfolio diversification strategy, adding a highly differentiated value proposition to its regional operations. Gurria emphasised that the opening reflects long-term confidence in Mexico's growth potential and a commitment to driving localised investment and job creation.
Global Footprint and Growth Targets
The Mexican debut represents the latest phase of Chipotle's expanding international presence. The company's global footprint is currently structured across several key regions and models:
Middle East Franchise Model: A July 2023 agreement with Alshaya Group has resulted in 15 operational restaurants across the United Arab Emirates, Kuwait, and Qatar.
Asia Joint Venture Model: In September 2025, Chipotle established a joint venture with South Korean food company SPC Group, with openings planned for South Korea later this year and Singapore in early 2027.
Corporate Owned Operations: Chipotle operates more than 80 locations in Canada, 20 in the United Kingdom, six in France, and two in Germany.
Globally, the company currently operates more than 4,100 restaurants. Under its current growth strategy, Chipotle expects to open between 350 and 370 new restaurants in 2026, with a long-term target of operating, 7000 locations across the United States and Canada.
