Speciality coffee roaster Merit Coffee Company has announced its retail entry into the Houston market, planning a three-site expansion starting in July 2026.


The San Antonio-founded, family-owned brand plans to open its first Houston café in the West University neighbourhood, marking a significant growth milestone in its regional expansion strategy. The launch will introduce the brand’s physical hospitality and coffee sourcing operations to Houston’s active food and beverage sector.



Planned Openings and Real Estate Partnerships

The Houston expansion marks the first time the Texas-born brand has entered the city since its founding in 2009. The brand, which currently operates 14 locations across San Antonio, Austin, and Dallas, plans to roll out the three upcoming Houston cafés systematically:


📍 West University – Located at 5115 Buffalo Speedway, the brand's debut Houston site is scheduled to open in early July, taking over a retail space previously occupied by Starbucks.


📍 The Heights – Scheduled to open in winter 2026, this café will be housed within the historic Swift Building.


📍 Memorial City – Also scheduled for a winter 2026 opening, this site will be located at the Greenside development.


Both the Heights and Memorial City mixed-use developments are being developed in partnership with Houston-based real estate developer Radom Capitol.


According to Bill Ellis, Chief Executive Officer of Merit Coffee, the decision to enter Houston follows extensive planning to identify compatible partners, neighbourhoods, and commercial opportunities in one of the country's most active food and beverage markets.


Local Supply Chain and Menu Integration

To support the regional launch and integrate with the local culinary ecosystem, Merit is partnering with Houston-based wholesale bakery Cake & Bacon.

Under the agreement, Cake & Bacon will supply a curated selection of sweet and savoury pastries and food items for the West University café and future Houston locations. The partnership reflects a broader industry trend where expanding beverage brands collaborate with established regional artisans to secure high-quality food offerings without increasing back-of-house operational complexity.


By utilising a trusted local supplier, the roaster can deliver a high-quality, neighbourhood-focused food selection that complements its core beverage programme from day one of unified operations.



Footprint Expansion and Retail Channels

Since opening its first site in 2009, Merit has established a dual-channel business model. In addition to its corporate cafés, the company distributes its packaged whole-bean and ground coffees through major retail and grocery networks across Texas, including H-E-B, Whole Foods Market, Sprouts, Kroger, and Central Market.


By securing physical café footprint density in high-traffic, mixed-use Houston destinations, the roaster aims to drive mutual brand awareness between its physical locations and its packaged consumer goods channels, strengthening its market share in the competitive Texas speciality coffee segment.
